Beskrivelse
History
Our sake brewery started out in the Keicho era (1596-1615) as Aburaya Chobei, an oil business refining the rapeseed of the Yamato Plain. We now trade under the name Yucho. In the 4th year of Kyoho (1719), production was shifted to sake brewing, a business we have been committed to for the past 300 years since.
The current Brew master is Chobei Yamamoto. Whilst we have inherited and continue to uphold traditional techniques, we also believe in responding to the changing tastes of the people and in taking on new challenges.
Location
Our brewery is located at the foot of the scenic Kongo-Katsuragi mountain range in Gose City (Nara Prefecture). Nara has not only served as the capital of Japan, many a time throughout Japanese history, but is also the birthplace of sake. The local soil is naturally blessed with a superior quality of water-a pivotal factor in sake production.
Our Policy
Sake, made with world-renowned fermentation techniques, has the standing and prestige befitting that of the traditional drink of a nation.
We, at the sake brewery, hope to be able to further honour our precious natural environment and the grains we have been blessed with. We believe in the importance of treating the raw ingredients with a compassionate heart, and going forward we wish to continue investing all our energies into the brewing of sake.
