HISTORY
Our brewing history starts in 1789 during the Edo period. At the corner of the factory building, we still have the pillars built at the time of founding. After WWII, we restarted brewing sake as Reijin Shuzo (brewing) Company Limited.
WATER
Reijin Shuzo is located in the Suwa Basin of approximately 760 meters above sea level, richly endowed with nature as Kamisuwa hot springs and Lake Suwa.
Over the years, rainwater is filtered through lava plateau called Kirigamine, which means fog peak in Japanese, located near the basin. And it flows into the basin as groundwater. The groundwater gushes from the well of Reijin Shuzo at 150 liters per minute always.
This water is used in all sake brewing process, which needs volumes of water, from begining to end.
VINTAGE and WARM SAKE
After a period of war and shortages, unfortunately, the original Japanese sake had been lost. We have been trying to revive the original sake, especially aged sake and warm sake (OKANZAKE).
In Japan, aged sake had been consumed since ancient times, however, in the early 20th century, it had died out for reasons of liquor tax. Over 30 years ago, we have been studied aged sake and stored it as vintage sake.
Due to the recent epidemic of Ginjo sake, a lot of people became to drink chilled sake, and the culture to drink warm sake has been died out. However, it is Japanese traditional culture to heat up sake to a temperature of 35 - 50 degrees Celsius and drink it. Warm sake is more flavorful and more suitable to drink with eating foods.
BEAUTEOUS SAKE
"REIJIN" means beauteous woman in Japanese. We wished that we could brew beauteous sake, and named our sake as "REIJIN".
Every day, we devote ourselves to provide delicious, quaffable, and trustworthy sake.
