Over 180 years Brewing History

Kiuchi Brewery was established 1823 by Kiuchi Gihei, the headman of Kounosu village. He began his brewery with the idea of using the remaining rice stocks in the warehouse.

Fujita Toko, one of a new political movement's activists at this time, was a close friend of Kiuchi and named one of his sakes "KIKUSAKARI" as a respect to the emperor. KIKU(chrysanthemum) is a crest of the imperial household, and SAKARI means "property".

Kodawari - Our Policy for Brewing

At Kiuchi we never start producing a product we don't feel is one the best of it's kind, and we have been rewarded for our efforts with accolades from all over the world.

Yeast

Yeast plays an important role in Brewing a Sake.

Not only fermentation, it also adds a profound effect on the final aroma and flavour of sake.

We use our own proprietary yeast strain and its choices are varied depending on the grade of sake and other factors.

Water

KIKUSAKARI uses water drawn from a well which is located in our brewery grounds.

This midium hard water is perfect for fermentation as it doesn't contain any iron or organic substances which might inhibits fermantation.

Hitachino Nest Beer

We've started beer brewing business, named the brand "HITACHINO NEST BEER" in autumn 1996. Over the years, Kiuchi Brewery has gained Japan and worldwide attention by winning awards at numerous world beer competitions.
