AMPERSAND DISTILLING COMPANY: Ampersand Distilling Company is a brand new family founded craft distillery located on a five acre organic farm in the Cowichan Valley. Though trained as engineers, father-son duo Stephen and Jeremy Schacht have used their knowledge of science and traditional distilling techniques to create a hand crafted distillery where they can make hand crafted spirits.
Since 2011 they have worked to design and build the custom equipment in the distillery: a 1000L mash tun, 1000L pot still, and 500L column still. These are the tools we use to ferment and distill the organic BC wheat that is the foundation of our spirits.
Like the Ampersand, we are all about bringing things together; ingredients & techniques; science & art; tradition & innovation. We bring you superior spirits and a sublime sipping experience.
